You Can Plan Your Dinner Ahead of Time – Even When You Will Be on the Road

Well, its spring.  That means my life gets exponentially busier.  I have 3 kids playing school sports, and 2 of them also play travel soccer.

When my life  gets busy, that usually means more drive-thrus for dinner.  I always assumed my kids liked hitting McDonalds on the way home from an event.  However, last night I asked the kids if they wanted fast food, or a ‘cooler dinner’, and they all picked the cooler dinner.

What is a cooler dinner you ask?  Well, its a dinner created by me ahead of time, that is composed of just about anything I can throw in the cooler.  It might be egg-salad sandwiches, cooked chicken, chicken pasta salad, PB&J, you name it.  It is always accompanied by some fruit, cut up vegetables, and maybe some cheese and crackers.  For some reason, the kids love it.  It could be the element of surprise, it could be the taste,  it could even be them lying and trying to please me, who knows.   In the end, the family is eating a much healthier dinner than a Happy Meal and I am saving some money.  What’s not to love?

I recognize not everyone is at home and has the ability to create a ‘cooler dinner’.   But if you can and you have the time, get creative and maybe put some things in the cooler that the kids may not ordinarily eat.  You never know what they may try when they are starving and are trapped in the car, with no other alternatives.   🙂

You are a rockstar when it comes to busy days! I am really going to try hard to make some cooler dinners. (Actually, I did do one last week – ham and cheese sandwiches, grapes and Pringles.) Our weeks are starting to get very busy in the evenings with sport stuff.

Well, I am a rockstar in many ways… 🙂 Thank you though. Rotisserie chicken has been wonderful for us. I can cut one up and the kids just love to eat it cold. You are now entering the phase where you will live in your car. Enjoy!
