Recipe Swap: Tortilla Pie

Today I am going to share one of my favorite recipes with you.  It is a favorite for three reasons:

  1. It tastes great
  2. It is incredibly easy
  3. It is a great way to use chicken leftovers

Actually, it was the first ‘meal’ my oldest son ever made for the family.  He came home from school one day and I said ‘You are making dinner’.  He protested, but oh well.  (It is my goal to make all 3 of my kids comfortable in the kitchen before they leave for college. He is lucky I didn’t pull out a spaghetti sauce recipe and tell him to start cooking!)  I did help him though, and since the chicken was already prepared, it was really more ‘assembling’ than cooking.

The ‘swap’ part of the post title alludes to a recipe I need.  Does anyone out there have a good chicken stew recipe?  I love chicken stew and I cannot find a good recipe for it.  If you have one, please, please email me or write it in the comment section so everyone can benefit!

Anyway, on to Tortilla Pie:

TORTILLA PIE

Ingredients:
*Leftover chicken soaked in some salsa (about 1.5 cups of chicken)
*1-2 cups of shredded cheese of your choice (depends on how much cheese you like)
*Small can of refried beans
*3 tortillas
Optional: sour cream, more salsa, guacamole

Preheat oven to 400 degrees. Spray a 9 inch round baking pan/pie plate with non-stick cooking spray. Place a tortilla in the bottom of the pan. Spread a layer of refried beans to cover the tortilla. Next, place a layer of salsa chicken atop the refried beans, and cover the chicken with shredded cheese. Place another tortilla on top and repeat with beans, chicken, and cheese. Place a final tortilla on top.  (You can optionally add another layer of cheese atop the 3rd tortilla if desired.)

Bake in preheated oven for 15 minutes. I like to use a pizza cutter to slice wedges and serve.

This recipe is supposed to serve 4, but I usually make 2 pies for our family of 5 and there might be one little wedge leftover.

That’s a brilliant idea! A layer cake of cheesy chickeny goodness. I’m going to have to try it as soon as possible. As for the chicken stew recipe, sorry I haven’t made one before.
But, if we had to make one from scratch, I guess we could start with a baked chicken (scratch or rotisserie store-bought), chicken bouillon cube or chicken stock, diced celery, onions and garlic browned in butter, bay leaf, a can of plum tomatoes, diced potatoes, green beans, baby carrots, a parmesan cheese crust, and white cannellini or navy beans added at the last minute…. garnish with olive oil in each bowl before serving.
Hmmm, sounds suspiciously like a minestrone recipe with chicken thrown in.
Suggest Googling “Marcella Hazan Minestrone”. Guaranteed you’ll like the results.

I haven’t made this but have eaten it and it’s really yummy. And you make it in the crockpot – a plus!

1/2 C chopped onion
1/2 C chopped celery
1/2 C chopped red or green pepper
1 clove chopped garlic
3 T butter
1 1/2 C chopped carrots
3 C chicken broth
1 t dill
1/2 t pepper
1 1/2 t salt
1 can chicken or salmon (or similar amount of cooked chicken)
1 can evaporated milk
1 can cream corn

Add everything to crock pot and cook until done. (Hmmm…my recipe doesn’t say how long. 4-6 hours on low?)

Can’t wait to try the tortilla pie!

Do you mean like a creamy chicken stew? From off the top of my head one way is to make a mirepoix by sauteeing onions, celery, and carrots together in butter until softened. Then you could add diced chicken pieces and sautee, if you have boneless skinless chicken pieces (if you have pieces with bone in I would skip this step and put them in the stewing step). Then add a whole lot of flour and toast (e.g. keep sauteeing). Some thyme and rosemary too, or your favorite other spices. Then add chicken broth or water, more veggies of your choice and stir until it is the thickness you want. If you’re using whole meat pieces, then add the chicken pieces and more water or broth than you think you’ll need, enough to cover the chicken pieces, bring to a boil, then stew until the chicken cooked and the liquid is the right consistency. Salt and pepper to taste.

Or you could look online for a good chicken and dumplings recipe. I vaguely recall the one on the bisquick box is pretty good.

Great thoughts Nicole. I could try it from scratch and see where it goes. I also never thought of looking up Chicken and Dumplings instead of Chicken Stew. I will start my quest today!

My husband’s grandmother is showing me how to make her homemade chicken and dumplings this Christmas (the biscuit-type of dumplings, not noodle-type which I don’t like), so I’ll send you the recipe once I have it. 🙂
